Ingredients:
  • 650g loaf sliced fruit bread
  • 50.00 gm reduced-fat spread
  • 410g can pie peaches, drained
  • 1.25 gm ground cinnamon
  • Vanilla custard, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and grease four ramekins each with a 1 1/4 cup capacity.
  • Remove the crust ends from the bread loaf and spread one side of each bread slice with the spread. Cut out one 6.5cm round from 4 slices of bread using a round cutter. Then, place one bread round, spread-side down, into the base of each prepared dish.
  • Trim the crusts off the bread slices and cut each slice into thirds. Arrange the pieces around the sides of the dishes with the spread-side facing out, overlapping slightly.
  • Gently pat dry the peaches. Mix them with cinnamon and honey in a bowl. Fill the dishes with the peach mixture, pressing down with a spoon. Fold bread over to enclose the filling, seal firmly by pressing down. Arrange dishes on a baking tray.
  • Bake until bread is golden and crisp, about 15-20 minutes. Let stand for 2 minutes, then carefully invert ramekins onto plates to unmold charlottes. Serve with custard.
