Peach Pecan Sweet Potatoes

Sweet potatoes and peaches layered with brown sugar, spices, and a splash of liqueur, topped with chopped pecans.
Ingredients:
  • 6 sweet potatoes, peeled and sliced 1/2 inch thick
  • 1 (16 ounce) package frozen unsweetened peach slices, thawed
  • 4 tablespoons butter, sliced into pats
  • 1 tablespoon lemon juice
  • 0.5 cup brown sugar
  • salt
  • 0.25 cup coffee flavored liqueur
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to a golden 350 degrees F (175 degrees C) and butter a 9x13-inch baking dish.
  • Begin with a layer of half the sweet potatoes at the bottom of the baking dish. Top it with half of the peach slices and dot with half of the butter. Repeat the layers with the remaining sweet potatoes and peach slices. Sprinkle lemon juice over the top. In a separate bowl, combine brown sugar, ginger, and salt, mixing them well.
  • Sprinkle the sugar mixture over the potatoes and peaches, dot with remaining butter, pour in the liqueur, and cover the pan with aluminum foil.
  • Roast in the oven until sweet potatoes are tender for about 1 hour. Uncover, top with pecans, and bake for an additional 10 to 15 minutes until pecans are golden and aromatic.
