Delicious holiday casserole with sweet potatoes, peaches, brown sugar-pecan topping, and optional marshmallow topping.
Ingredients:
  • 1 (40 ounce) can Bruce's® Yams Cut Sweet Potatoes in Syrup, drained
  • 1 (16 ounce) can sliced peaches (no sugar added), drained, juice reserved
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon pepper
  • 0.33333334326744 cup chopped pecans
  • 0.25 cup brown sugar
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, place the sweet potatoes and cut them into slightly smaller pieces. Set aside 4 to 5 peach slices for garnish and add the remaining peach slices to the bowl with the sweet potatoes. Pour in 1/2 cup of the reserved peach juice, along with ginger, salt, and pepper. Mix everything together until well combined, then transfer the mixture to a 2-quart baking dish.
  • Combine pecans and brown sugar in a bowl. Sprinkle this mixture over the casserole and line up the reserved peach slices down the center.
  • Bake in the preheated oven for 35 to 40 minutes until the casserole is hot and bubbly.
