Peanut brittle ice-cream sandwiches

Create a mouthwatering summer dessert by pairing homemade peanut brittle ice cream with chocolate chip cookies.
Ingredients:
  • 375ml (1 1/2 cups) milk
  • 375ml (1 1/2 cups) thickened cream
  • 1 vanilla bean, split, seeds scraped
  • 6 egg yolks
  • 140g (2/3 cup) caster sugar
  • 80ml (1/3 cup) water
  • 40g butter
  • 40.40 gm thickened cream
  • 40.00 ml finely chopped salted peanuts
  • Chocolate chip biscuits, to serve
Instructions:
  • Place the 1.25L (5-cup) metal loaf pan in the freezer to chill. In a saucepan, combine the milk and cream. Add the vanilla bean and seeds. Bring the mixture to a boil, then let it cool for 5 minutes. Remove the vanilla bean before proceeding.
  • Whisk yolks and sugar until thick and pale with a balloon whisk, creating a trail when lifted. Then, whisk in the cream mixture.
  • Transfer the mixture to a clean saucepan and cook over low heat while stirring constantly with a flat-edged wooden spoon for 15-20 minutes until the custard thickens to coat the back of the spoon and leaves a trail when your finger runs through it. Next, move the custard to a medium heatproof bowl, cover the surface with plastic wrap to prevent a skin from forming, and set aside for 30 minutes to cool. Finally, chill in the fridge for 2 hours before using.
  • To prepare the caramel, gently combine sugar and water in a saucepan over low heat for 5 minutes to dissolve. Increase heat and allow the mixture to come to a boil. Simmer for 5 minutes until it turns golden. Remove from heat and mix in butter and cream. Gently fold in peanuts and let it cool before using.
  • Churn the chilled custard in an ice-cream machine for 30-40 minutes. Layer half of the ice-cream into a chilled pan, then swirl half of the caramel on top. Repeat with the remaining ice-cream and caramel layers. Cover with foil and freeze for at least 6 hours until firm.
  • Allow the ice-cream to soften slightly, then place it between two chocolate chip biscuits to make a delicious sandwich.
