Fluffy, quick, and easy peanut butter chocolate chip cupcakes - a timeless favorite!
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 cup brown sugar
  • 0.25 cup chunky peanut butter
  • 3 tablespoons unsalted butter, softened
  • 0.5 teaspoon vanilla extract
  • 0.5 cup milk
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and nestle paper liners into a muffin tin.
  • Combine flour, baking powder, and salt in a bowl and whisk until fully mixed.
  • In a separate bowl, blend brown sugar, peanut butter, and butter with an electric mixer until creamy. Add egg and vanilla extract. Mix in flour and milk until smooth. Gently fold in chocolate chips.
  • Fill the muffin tin with the batter using a spoon.
  • Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool on a wire rack for about 30 minutes.
