Indulge in childhood nostalgia with simple and irresistible chocolate peanut butter cookies.
Ingredients:
  • 1 stick (1/2 cup) unsalted butter, at room temperature
  • 1/2 cup (129 g) peanut butter
  • 1/2 cup (100 g) granulated sugar, plus more for rolling
  • 1/2 cup (110 g) packed brown sugar
  • 1 large egg
  • 1 1/2 cups (187 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 24 chocolate kiss candies, unwrapped
Instructions:
  • Preheat your oven to 350˚F and line two baking sheets with parchment paper.
  • For the wet ingredients, blend butter, peanut butter, and sugars in a bowl until smooth. Incorporate the egg until fully mixed. In a separate bowl, combine flour, baking powder, and salt.
  • Gradually add the flour mixture to the peanut butter mixture, mixing until a smooth cookie dough forms.
  • Prepare the cookie: Combine a sprinkle of sugar in a small bowl. Portion the dough into 1 1/2 tablespoon balls. Roll into smooth balls, then coat with sugar. Space the balls a few inches apart on the baking sheet.
  • Baking the cookies: Bake them on the middle rack for around 12 minutes until slightly spread out, topped with a dome, and golden at the bottom. Press a chocolate kiss into the center of each cookie right away.
  • Cool and store: Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a rack to cool completely. Store the cookies in an airtight container at room temperature for up to a few days.
