Simple peanut butter chocolate chip ice cream - perfect for preparing in advance.
Ingredients:
  • 100g dark chocolate, chopped
  • 63.13 gm thickened cream
  • 2 litres vanilla ice-cream
  • 85.80 gm smooth peanut butter
  • 165.00 ml milk chocolate chips
  • 85.80 gm peanut butter chips
Instructions:
  • In a small saucepan, gently melt the dark chocolate and cream together over low heat, stirring constantly for 2 to 3 minutes until smooth. Allow it to cool for 10 minutes before using.
  • Allow the ice cream to soften in a large bowl for 10 minutes, ensuring it doesn't melt completely.
  • In a microwave-safe bowl, heat the peanut butter on MEDIUM (50%) for 20 to 30 seconds until softened. Mix in 1/2 cup chocolate chips and 1/4 cup peanut butter chips, then fold into the ice cream.
  • Spread half of the ice-cream in a 7cm-deep, 11cm x 21cm loaf pan. Drizzle half of the melted chocolate mixture over the ice-cream. Swirl the mixture through the ice-cream using a butter knife. Add the remaining ice-cream and spread it evenly.
  • Drizzle on the rest of the chocolate mixture, then sprinkle with the remaining chocolate chips and peanut butter chips. Freeze overnight or until firm.
  • Take out of the freezer and let it sit for 10 minutes to slightly soften before serving.
