Decadent peanut butter cupcakes, ideal for celebrations. Enjoy plain or with your preferred frosting!
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 cups brown sugar
  • 1 cup peanut butter
  • 0.5 cup shortening
  • 1.5 cups milk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 24 muffin cups with paper liners.
  • In a bowl, mix together the flour, cream of tartar, baking soda, and salt.
  • In a spacious bowl, combine brown sugar, peanut butter, and shortening, beating until fluffy. Add eggs one at a time, then mix in vanilla. Alternate adding dry ingredients and milk, then spoon into muffin cups.
  • Bake in the preheated oven for 15 to 20 minutes until the tops bounce back when lightly touched. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
