Delicious pear butter with orange zest and nutmeg - perfect on toast or pork.
Ingredients:
  • 4 pounds medium pears, quartered and cored
  • 1/2 cup cold water, or as needed
  • 2 cups sugar
  • 1 teaspoon grated orange zest
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup orange juice
Instructions:
  • In a large pot over medium heat, gently simmer pears with 1/2 cup of water to prevent sticking, until soft, approximately 30 minutes. Strain the cooked pears through a sieve or food mill and measure out 2 quarts of the pulp.
  • Combine pear pulp and sugar in a large saucepan, mixing until sugar dissolves. Add orange zest, nutmeg, and orange juice, and cook over medium heat until thick enough to coat a spoon. Stir frequently to avoid scorching for approximately 1 hour.
  • Fill hot sterile jars with pear butter, leaving a 1/4-inch headspace. Eliminate air bubbles by running a metal spatula along the glass edges. Clean jar rims, seal with lids and rings, and process in a boiling water bath for 10 minutes. Ensure jars are covered by 1 inch of water. Verify processing times with your local extension office.
