Pear Cake with Pine Nuts

Fluffy pear cake made with Gold Medal® flour and pine nuts for added moisture and crunch - a delectable after-dinner treat.
Ingredients:
  • 2 tablespoons pine nuts
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1/4 cup cold butter
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup fat-free sour cream
  • 1/4 cup 1% low-fat milk
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 2 cups thinly sliced peeled pears
Instructions:
  • Preheat oven to 350°F. Spread pine nuts in a shallow ungreased pan and bake for 6 to 10 minutes, stirring occasionally, until they turn light brown. Allow to cool before using.
  • Begin by generously coating a 9-inch round cake pan with cooking spray. In a spacious bowl, combine flour, sugar, and salt. Utilize a pastry blender or 2 table knives to cut in the butter until the mixture resembles coarse meal. Transfer 1/3 cup of the flour mixture to a small bowl, then mix in cinnamon and toasted pine nuts, and set aside.
  • Add the sour cream, milk, lemon peel, vanilla, baking powder, baking soda, and egg to the remaining flour mixture in a large bowl. Use an electric mixer on medium speed to beat until well blended. Pour the batter into the cake pan and top with pear slices. Sprinkle the reserved pine nut mixture over the top.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan on a cooling rack.
