Seasonal fall and winter recipe using any variety of fresh pears.
Ingredients:
  • 4 eggs
  • 1.5 cups packed brown sugar
  • 0.75 cup butter, melted
  • 2 teaspoons vanilla extract
  • 1.5 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 1.5 cups coarsely grated unpeeled pears
Instructions:
  • Combine the flours, oats, baking powder, baking soda, cinnamon, and salt, stirring well.
  • Beat the eggs in a large bowl until smooth, then gradually mix in the brown sugar until the mixture thickens. Add the melted butter or margarine and vanilla, and mix well. Gently fold in the flour mixture followed by the grated pears. Pour the batter into a greased and floured tube pan.
  • Bake at 325 degrees F (165 degrees C) for 70 minutes, or until a toothpick comes out clean. Transfer the cake to a cooling rack.
