Slow-cooked pear honey: perfect for biscuits and gifts.
Ingredients:
  • 8 cups peeled, cored and chopped pears
  • 1 cup unsweetened pineapple juice
  • 8 cups white sugar
Instructions:
  • In a large pot, add chopped pears and pour pineapple juice over them to keep them from browning. Mix in sugar and bring to a boil over medium-high heat, stirring often to prevent sticking. Once the pears reach a full boil, lower the heat to medium and simmer until the mixture resembles the color and thickness of honey, which takes about 2 to 3 hours. Remember, the longer you cook it, the thicker it will become.
  • Carefully transfer the hot mixture into clean, sterilized jars, leaving 1/4 inch of space at the top. Wipe the rims clean with a damp cloth before sealing the jars with lids and rings. Process in a boiling water canner for 10 minutes, or as per the local extension's guidelines for your area.
