Pear Jam

Spiced pear jam, a delightful gift in glass jars.
Ingredients:
  • 4.5 cups mashed ripe pears
  • 0.25 cup lemon juice
  • 3 tablespoons powdered fruit pectin
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground nutmeg
  • 7.5 cups white sugar
  • 1 teaspoon butter
  • 8 half-pint canning jars with lids and rings, or as needed
Instructions:
  • Assemble all your ingredients.
  • Combine pears, lemon juice, fruit pectin, and a medley of warm spices in a large heavy pot. Bring to a lively boil while stirring continuously.
  • Add the sugar in one go, stirring continuously, until the mixture comes to a full rolling boil. Let it boil for 1 minute.
  • Incorporate the butter to dissipate any foam.
  • Place the jars and lids in a pot of boiling water for a minimum of 5 minutes to sterilize.
  • Fill the hot, sterilized jars with the pear jam, leaving 1/4 inch of space at the top. Remove air bubbles by running a knife or thin spatula around the inside of the jars. Clean the rims with a moist paper towel to ensure no food residue remains. Secure lids by topping and screwing-on rings.
  • Position a rack in a large stockpot filled halfway with water and bring to a boil. Using a jar holder, gently lower jars into the water, ensuring a 2-inch space between them. Add more boiling water if needed to reach at least 1 inch above the jar tops. Cover the pot, allow the water to reach a rolling boil, and process for 10 minutes.
  • Take out the jars from the stockpot and place them on a cloth-covered or wood surface, spaced several inches apart, until they are cool. Press the top of each lid with a finger to ensure a tight seal (lid does not move up or down). Store in a cool, dark place.
