Top poached pears with luscious raspberry sauce for an irresistible dessert that will wow your guests.
Ingredients:
  • 4 small pears, peeled, halved, cored
  • 1 lemon, halved
  • 220g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 250g raspberries (fresh or frozen)
  • Vanilla ice cream, to serve
  • Mint leaves, to garnish
Instructions:
  • Prevent discoloration by gently massaging the pears with lemon. Combine sugar, 1 1/2 cups (375ml) water, and vanilla in a saucepan over low heat until sugar dissolves. Carefully add pears and poach for 8-10 minutes until tender, adjusting time for ripeness. Let cool before serving.
  • Puree 1/2 cup (125ml) of the poaching liquid with half of the berries until smooth. Gently mix in the remaining berries. Chill before serving.
  • Present a delectable dessert by arranging sliced pears and a scoop of ice cream on a plate, then generously drizzle with your favorite sauce and garnish with fresh mint leaves.
