Pecan Coconut Chocolate Chip Cookies

Indulgent cookies filled with semisweet and white chocolate chips, coconut, and pecans, with a touch of coconut extract for extra nuttiness.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 cup butter-flavored shortening
  • 0.5 cup butter, softened
  • 0.75 cup brown sugar
  • 0.75 cup white sugar
  • 1 teaspoon coconut extract
  • 1.5 cups sweetened flaked coconut
  • 1 cup chopped pecans
  • 0.75 cup semisweet chocolate chips
  • 0.75 cup white chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a bowl, mix flour, baking soda, and salt. In a separate bowl, cream together shortening, butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, incorporating coconut and vanilla extract with the last egg. Slowly add the flour mixture to the butter mixture, then gently fold in coconut, pecans, semisweet chocolate chips, and white chocolate chips.
  • Using a spoon, portion out dough and roll into 1-inch balls. Place them 2 inches apart on baking sheets, then gently press to slightly flatten.
  • Bake until golden brown, about 10-12 minutes. Let the cookies cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
