Pecan Crusted Chicken

Panko pecan crusted chicken breasts cooked until crispy and golden in yogurt marinade.
Ingredients:
  • 3 to 4 boneless skinless chicken breasts (about 1 lb)
  • 3/4 cup Progresso™ Italian style panko crispy bread crumbs
  • 1/2 cup chopped pecans
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 3 tablespoons olive oil or butter
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper, then gently pound with a meat mallet or rolling pin until they are about 1/2 inch thick.
  • Combine together the bread crumbs, pecans, and parsley in a shallow dish. In a separate shallow dish, place the yogurt. Dip the chicken into the yogurt, then coat it generously with the crumb mixture.
  • Heat oil in a 10-inch skillet over medium heat until hot. Cook chicken for 8 to 10 minutes, turning once, until center is no longer pink and coating is golden brown.
