Buttery thumbprint cookies with a sweet, pecan-filled center.
Ingredients:
  • 0.5 cup butter
  • 1 cup light brown sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 cup chopped pecans
  • 0.125 cup sour cream
  • 0.25 cup brown sugar
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease your cookie sheets.
  • Cream the butter and 1 cup brown sugar until smooth in a medium bowl. Add the egg and vanilla, mix well. Combine the flour, baking soda, and salt; fold into the sugar mixture. Shape the dough into 1-inch balls and place them 2 inches apart on the cookie sheets. Use the cap of the vanilla or a wooden spoon to make an indentation in the center of each cookie. Fill each hollow with a mixture of pecans, sour cream, and 1/4 cup brown sugar.
  • Bake in the preheated oven for 8 to 11 minutes until lightly browned. Allow to cool briefly on the cookie sheets before transferring to wire racks to cool completely.
