Irresistibly crumbly pecan cookies, loaded with pecans and coated in sugar for a buttery, melt-in-your-mouth treat.
Ingredients:
  • 1 cup margarine, softened
  • 1 cup vegetable oil
  • 1 cup confectioners' sugar, sifted
  • 4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 2 cups chopped pecans
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to 375°F (190°C).
  • In a large bowl, use an electric mixer to blend together 1 cup white sugar, butter, oil, and confectioners' sugar until smooth.
  • Add the eggs one at a time, beating thoroughly after each addition, then mix in the vanilla extract.
  • In a medium bowl, mix together flour, baking soda, cream of tartar, and salt. Stir the dry mixture into the egg mixture until a dough forms, then fold in the pecans.
  • Put the remaining 1/2 cup of white sugar in a small shallow bowl. Form the dough into 1-inch balls, flatten slightly, and coat evenly with sugar by rolling.
  • Place cookies on ungreased cookie sheets, spacing them 2 inches apart.
  • Bake in the preheated oven until edges turn golden, about 10 to 12 minutes. Allow cookies to cool completely on wire racks.
