Festive pecan cookie bites rolled in powdered sugar, ideal for holiday gatherings. Perfect for your Christmas celebration!
Ingredients:
  • 1 cup unsalted butter
  • 0.5 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 2 cups sifted all-purpose flour
  • 2 cups finely chopped pecans
  • 1 tablespoon sifted confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 325°F (165°C) and lightly grease 4 baking sheets.
  • Cream butter and brown sugar together in a bowl with an electric mixer until light and fluffy. Mix in vanilla extract, then gradually add flour until mixture is crumbly. Finally, incorporate pecans into the dough.
  • Take small amounts of dough, about a teaspoon, and roll them in your hands to create 1/2-inch balls. Place the balls on the baking sheets.
  • Bake in the oven until golden brown and firm on the bottom, for about 15-18 minutes.
  • Take the cookies out of the oven and allow them to cool for around 5 minutes. Then, coat the warm cookies in confectioners' sugar.
