Pecan-Crusted Grilled Salmon

Grill a quick and classy entree in only 25 minutes.
Ingredients:
  • 1 salmon fillet (1 lb)
  • 1 teaspoon olive oil
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup croutons, crushed
  • 1/4 cup chopped pecans
Instructions:
  • Preheat the closed contact grill for 5 minutes. In the meantime, brush both sides of the salmon fillet with oil.
  • Once the grill is hot, lay the salmon skin-side down on the lower grill surface and close the lid. Cook for 5 minutes.
  • While you wait, combine mayonnaise and mustard in one small bowl. In a separate bowl, mix crushed croutons with pecans.
  • Use the back of a spoon to spread the mayonnaise mixture over the salmon, then sprinkle with the crumb mixture before closing the grill. Cook for 1 to 2 minutes more until the salmon flakes easily with a fork. Lastly, cut the salmon into serving pieces before serving.
