Vibrant tomato and basil pasta salad - toss hot pasta with garlic, scallions, cheese, and olives for a quick, flavorful dish.
Ingredients:
  • 1 (12 ounce) package penne pasta
  • 0.25 cup olive oil
  • 1 bunch green onions, chopped
  • 1 clove garlic, minced
  • 1 cup quartered cherry tomatoes
  • salt and pepper to taste
  • 5 ounces mozzarella cheese, diced
  • 0.5 cup grated Parmesan cheese
  • 4 ounces fresh basil
  • 12 large black olives, halved
Instructions:
  • 1. Boil generously salted water in a large pot. Add penne and cook, stirring occasionally, until al dente, about 11 minutes. Drain and set aside.
  • In a small saucepan, heat olive oil. Cook green onions for 2-3 minutes, stirring occasionally. Add garlic and cook for 2 more minutes. Mix in pasta, tomatoes, salt, and pepper. Warm over low heat.
  • Mix in the creamy mozzarella and flavorful Parmesan cheese. Tear the fragrant basil leaves into halves or thirds and add them to the pasta along with the olives. Serve right away for the best taste!
