Fresh summer vegetables sautéed with penne pasta.
Ingredients:
  • 1 tablespoon olive oil
  • 1 clove garlic, crushed
  • 2 cups broccoli florets
  • 1 medium carrot, julienned
  • 2 cups vegetable broth
  • 1 (8 ounce) package penne pasta
  • 0.5 cup frozen peas
  • 0.5 cup freshly grated Parmesan cheese
Instructions:
  • In a large skillet over medium heat, sauté the olive oil and garlic until aromatic. Remove the garlic and set aside. Add the broccoli and carrot to the skillet, cooking for 2 minutes until just heated through.
  • Bring the vegetable broth to a lively boil in a pot. Add the penne pasta and warm crushed garlic clove. Cook for 5 minutes, until the pasta is nearly al dente. Remove and discard the garlic clove.
  • Add the par-cooked pasta and broth to the skillet along with the peas. Cover and simmer over medium heat for 10 minutes until the pasta is al dente and the vegetables are tender. Finish by mixing in the Parmesan cheese before serving.
