Lamb shank pasta sauce: rich and exquisite.
Ingredients:
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, diced
  • 2 sticks celery, diced
  • 44.40 gm tomato paste
  • 800g can chopped tomatoes
  • 750.00 ml cooked lamb shank meat (see related recipe)
  • 400g penne rigate
  • 82.50 ml basil leaves, roughly chopped
  • Shaved parmesan cheese, to serve
  • Basil leaves, to serve
Instructions:
  • In a large saucepan over medium-high heat, warm oil. Add onion, garlic, carrot, and celery, stirring occasionally until vegetables are soft, about 4 to 5 minutes. Stir in tomato paste until well combined. Add tomatoes, lamb shank meat, and 1 cup of cold water. Bring to a boil, then reduce heat to low. Simmer uncovered for 30 minutes until sauce thickens.
  • Cook the pasta in a large saucepan of boiling salted water according to the package instructions until tender. Drain the cooked pasta.
  • Serve the braised lamb with basil over the pasta topped with shaved parmesan and basil leaves in bowls.
