Quick and healthy pesto for a fast meal.
Ingredients:
  • 375g penne
  • 1 large head broccoli, cut into small florets
  • 150g feta, crumbled
  • 500.00 ml firmly packed baby rocket
  • 2 garlic cloves, quartered
  • 40.00 ml grated parmesan (or vegetarian hard cheese)
  • 40.00 ml slivered almonds, toasted
  • 75.08 gm olive oil
  • 42.00 gm lemon juice
Instructions:
  • Prepare the pasta in a large saucepan of boiling salted water according to the instructions on the packet until tender, adding broccoli for the last 3 minutes of cooking. Drain the pasta and broccoli, then return them to the pan.
  • Prepare pesto by combining rocket, garlic, parmesan, and almonds in a food processor. Pulse until finely chopped. While the processor is running, slowly pour in the combined oil and lemon juice until the pesto is nearly smooth. Season with salt to taste.
  • Combine half of the pesto and half of the feta in the pan, gently toss to mix. Season with pepper. Serve the pasta sprinkled with the remaining feta and pesto on top.
