Whip up a tasty broccoli and bacon pasta for a quick, easy, and delicious dinner!
Ingredients:
  • 300g penne rigate
  • 1 head broccoli, cut into small florets
  • 1 lemon
  • 6 bacon rashers, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1 fresh long red chilli, seeded, thinly sliced
  • 45g pine nut
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in salted water until al dente according to package instructions. Add broccoli during the last minute of cooking. Drain thoroughly.
  • Zest the lemon using a zester, being careful to remove only the outer layer for flavor. Then, juice the lemon.
  • In a medium frying pan over medium heat, heat oil. Add bacon and cook for 5 minutes, stirring occasionally, until lightly golden. Stir in garlic and chili and cook for 1 minute until aromatic. Remove from heat.
  • Combine the bacon mixture, pine nuts, lemon rind, and 2 tablespoons of lemon juice with the pasta mixture, gently tossing everything together.
  • Divide pasta into serving bowls, generously sprinkle with shaved parmesan, and serve right away.
