Penne with tomato, basil, olives and pecorino

Pasta shines with simple, quality ingredients harmoniously combined.
Ingredients:
  • 750 g pomodorino tomatoes
  • olive oil
  • sea salt
  • freshly ground black pepper
  • good-quality balsamic vinegar
  • 500 g penne
  • 200 g black olives stoned and halved
  • 1 small bunch fresh basil leaves picked
  • 1 chunk pecorino cheese to serve
Instructions:
  • Preheat the oven to 200°C/400°F/gas 6. Place tomatoes in a roasting tin, drizzle with olive oil, season with salt and pepper, and roast for 20 minutes. Mash the roasted tomatoes with a fork, then drizzle with balsamic vinegar. Boil salted water, cook pasta until al dente, drain, and mix with tomato sauce, olives, and torn basil leaves. Season, top with basil leaves, and garnish with grated pecorino before serving.
