Ingredients:
  • 3 cups uncooked penne pasta (9 oz)
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 2 cups Alfredo pasta sauce
  • 1 cup shredded smoked mozzarella cheese (4 oz)
Instructions:
  • Preheat oven to 350°F. Grease a 1 1/2-quart casserole dish with cooking spray. Prepare pasta according to package instructions.
  • In a 2-quart saucepan, bring tomatoes to a boil. Simmer over medium heat for 6 to 8 minutes, stirring occasionally, until the liquid has reduced.
  • Heat Alfredo sauce in a 2-quart saucepan over medium-low heat until warm. Stir in the cheese until melted, then mix in the cooked pasta and tomatoes before pouring into a casserole dish.
  • Bake uncovered for around 30 minutes, or until the center is heated through.
