Penne with turkey, sage and cream sauce

Start your week with this simple and delicious parmesan-topped pasta dish.
Ingredients:
  • 350g penne rigate
  • 18.20 gm olive oil
  • 2 garlic cloves, crushed
  • 500g turkey mince
  • 60ml (1/4 cup) apple cider vinegar
  • 250ml (1 cup) passata (tomato pasta sauce)
  • 125ml (1/2 cup) pouring cream
  • 2 tsp chopped fresh sage
  • 62.50 ml chopped fresh continental parsley
  • 30g (1/3 cup) shaved parmesan
Instructions:
  • Cook the pasta in a generously salted pot of boiling water according to the package instructions until it is just tender. Drain the pasta and transfer it back into the pot.
  • Heat oil in a large frying pan over high heat. Sauté garlic until aromatic, then add mince. Cook for 5 minutes, breaking up any lumps with a wooden spoon, until the mince changes color.
  • Pour the vinegar into the mince, cooking until slightly reduced, about 2-3 minutes. Stir in the passata, cream, and sage, then let simmer until the sauce slightly thickens, approximately 10 minutes. Season with salt and pepper to taste.
  • Combine the mince mixture and parsley with the pasta, mixing thoroughly. Serve in individual dishes and sprinkle with parmesan before serving.
