Turkey Bolognese with Penne

Mouthwatering turkey Bolognese with rich tomato sauce, carrots, parsley, and wine served over penne pasta.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 0.75 cup chopped carrots
  • 0.5 cup chopped onion
  • 0.5 cup chopped celery
  • 1 tablespoon ground thyme
  • 1 pinch red pepper flakes
  • 0.25 cup dry white wine
  • 2 cups tomato sauce
  • 0.5 cup tomato juice
  • 2 tablespoons dried parsley
  • 1 (8 ounce) package penne pasta
  • 0.5 cup grated Parmesan cheese
  • salt and ground black pepper to taste
Instructions:
  • In a large skillet, heat oil over high heat. Brown ground turkey for 5 to 7 minutes. Add carrots, onion, celery, garlic, thyme, and red pepper flakes. Stir-fry until vegetables are tender for 5 to 10 minutes. Drain grease, if needed. Pour in white wine; cook until almost evaporated for about 5 minutes. Stir in tomato sauce, tomato juice, and parsley. Simmer on low heat until the sauce thickens for about 20 minutes.
  • While waiting, heat a generous amount of salted water in a large pot until it boils. Cook the penne, stirring occasionally, until perfectly al dente, approximately 11 minutes. Drain the pasta and transfer it back to the pot. Combine with the sauce and Parmesan cheese, ensuring everything is thoroughly mixed. Finish by seasoning with salt and pepper to taste.
