Delicious penuche fudge with white and brown sugar, creamy milk, and crunchy pecans.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup brown sugar
  • 0.33333334326744 cup half-and-half cream
  • 0.33333334326744 cup milk
  • 2 tablespoons margarine
  • 1 teaspoon vanilla extract
  • 0.5 cup pecan halves
Instructions:
  • Grease a baking sheet and the sides of a 2-quart heavy saucepan with butter.
  • Combine white sugar, brown sugar, cream, milk, and margarine in a saucepan. Cook over medium heat until it comes to a boil. Without stirring, heat the mixture to a temperature between 234 and 240 degrees F (112 to 116 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when taken out and placed on a flat surface. Remove from heat and cool the mixture to lukewarm (110 degrees).
  • Add the vanilla and beat enthusiastically until the mixture loses its shine. Immediately fold in the pecans and spread the mixture onto the prepared sheet. While still warm, create squares by scoring the mixture, then cut once it has hardened.
