Irresistible spicy-sweet pepper jelly pork tenderloin - a guaranteed hit!
Ingredients:
  • 2 teaspoons chili powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground cumin
  • 1 pork tenderloin
  • 0.25 cup hot pepper jelly
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Combine chili powder, black pepper, ground cumin, and salt in a small bowl, then coat all sides of the pork tenderloin with the spice mixture and place it in a shallow roasting pan.
  • Roast the tenderloin in the preheated oven for approximately 30 minutes until the center is no longer pink, reaching an internal temperature of 150°F (65°C) when checked with an instant-read thermometer.
  • Combine pepper jelly and balsamic vinegar in a saucepan over gentle heat until jelly is fully melted, for 1 to 2 minutes. Brush the mixture over the pork tenderloin and bake until the jelly coating is heated through, about 5 minutes. Allow the pork to rest for 5 minutes before slicing.
