Ingredients:
  • 200g dark chocolate, chopped
  • 150g butter
  • 268.75 gm caster sugar
  • 187.50 ml plain flour
  • 42.90 gm cocoa
  • 150g pkt Mint Slice
  • 100g dark chocolate
  • 83.33 gm cream
  • Peppermint Crisp bars, crushed
Instructions:
  • Preheat the oven to 180°C. Grease 32 mini muffin pans with 1 1/2 tablespoons of butter. Microwave dark chocolate and butter in a heatproof bowl on High, stirring every 30 seconds until melted. Cool slightly.
  • In a bowl, combine caster sugar, plain flour, cocoa, and Nestle Mint Slice bits. Mix well. Stir in melted chocolate and eggs until fully combined. Spoon the batter into the pans.
  • Bake for 15 minutes until golden. Let cool for 10 minutes. Microwave dark chocolate and cream until melted. Cool slightly. Spread over muffins and top with crushed Peppermint Crisp bars.
