Loaded Pepperoni and Ricotta Calzones made with simple No Knead pizza dough. Bakes golden brown, served with extra dipping sauce.
Ingredients:
  • 2 pounds prepared pizza dough
  • 4-6 tablespoons marinara sauce, plus more for dipping
  • 8 ounces ricotta cheese
  • 4 ounces pepperoni, sliced
  • 8 ounces grated mozzarella cheese
  • 2 tablespoons chopped fresh oregano
  • For the egg wash:
  • 1 large egg wash
  • 1 tablespoon water
Instructions:
  • Preheat your oven to 375°F.
  • Shape the dough: Divide the prepared pizza dough into 4 balls for large calzones or 6 for smaller ones. Work with one ball at a time, keeping the rest covered to prevent drying out.
  • Roll out the dough: Place the dough ball on a lightly floured surface and roll it into a 6-8 inch circle, depending on the desired size. Aim for 8 inches for larger calzones and 6 inches for smaller ones. Repeat with the remaining dough balls to create mini pizza crusts for filling.
  • To fill the calzones, create a 1/2-inch border around the edge of the dough to seal later. Place approximately a tablespoon of marinara sauce on one half of the dough circle. Add roughly two tablespoons of ricotta cheese, spreading it over half of the dough while maintaining the border. Repeat for all dough circles. Evenly distribute diced pepperoni, mozzarella, and fresh oregano among the calzones.
  • Seal the calzones by lightly wetting the edge of the dough with water. Fold the unfilled side over the filling and pinch the edges closed.
  • Make steam vents on the calzone: Cut three slits on the top of each calzone using a serrated knife to release steam while baking.
  • Prepare egg wash: In a small bowl, whisk together 1 egg and 1 tablespoon of water until well combined. Brush the top of the calzones with the egg wash using a pastry brush.
  • Bake the calzones on a parchment-lined baking sheet for 35 to 40 minutes until they are a deep golden brown all around.
  • To Serve: Enjoy the calzones hot with additional marinara sauce on the side for dipping.
