Sizzle pepperoni with shallots and garlic, add tomatoes, cream, parsley, then toss with pasta and top with Parmesan.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 0.75 pound sliced pepperoni sausage
  • 2 tablespoons minced shallots
  • 1 clove garlic, minced
  • 4 medium tomato - peeled, seeded and chopped
  • 1 cup heavy whipping cream
  • 0.25 cup chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Prepare penne pasta following the instructions on the package.
  • Sauté pepperoni in a large skillet until crispy, for about 5 to 8 minutes. Leave 1 tablespoon of grease in the skillet and drain the excess.
  • Combine the shallot and garlic with the hot grease in the skillet until they become translucent. Add the tomatoes, then let everything simmer for approximately 3 minutes.
  • Combine cream and cook until thickened, around 8 minutes. Stir in parsley and remove from heat.
  • Toss pasta with Parmesan cheese for a delicious finish.
