Peppers Stuffed with Broccoli, Beans and Rice

Try these delicious stuffed peppers filled with broccoli, beans, and rice for a satisfying dinner.
Ingredients:
  • 2 large bell peppers, cut in half lengthwise, seeded
  • 2/3 cup water
  • 1/2 cup uncooked instant brown rice
  • 1 cup chopped fresh broccoli
  • 2 tablespoons chopped onion
  • 1/2 cup canned red beans, drained, rinsed
  • 1/3 cup thick & chunky salsa
  • 1/4 cup shredded reduced-fat cheddar cheese (1 oz)
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Place peppers cut side down in a square microwavable dish. Cover the dish with plastic wrap, leaving a small opening to vent steam. Microwave on High for about 4 minutes until peppers are tender.
  • In a 1-quart saucepan, bring water to a boil. Add rice, broccoli, and onion. Reduce heat, cover, and simmer for about 10 minutes until water is absorbed. Mix in beans and salsa.
  • Fill pepper halves with hot rice mixture, placing them filled side up in a microwave-safe dish. Top each pepper half with 1 tablespoon of cheese. Cover the dish with plastic wrap, leaving a small opening to vent steam. Microwave on High for about 1 minute until cheese is melted. Garnish with cilantro and let it sit for 1 to 2 minutes before serving.
