Enhance chicken flavor and keep it juicy with this easy brine.
Ingredients:
  • 16 cups water
  • 0.75 cup kosher salt
  • 0.66666668653488 cup white sugar
  • 0.25 cup dried sage, or to taste
  • 0.25 cup dried basil, or to taste
  • 2 heads garlic, crushed and chopped
  • 1 tablespoon whole black peppercorns
  • 1 large bay leaf
Instructions:
  • In a large pot over medium-high heat, simmer water with kosher salt, sugar, sage, basil, garlic, peppercorns, and bay leaf until sugar and salt are completely dissolved, about 20 minutes. Stir occasionally.
  • After removing from heat, cover the brine with a lid and let sit at room temperature for 2 hours to allow the dried herbs to steep and enhance the flavor. Then, refrigerate for at least 1 hour to finish cooling before using.
