Make a mouthwatering meatloaf: blend turkey, beef, and quinoa for a lean and tasty twist.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 1 onion, diced
  • 0.5 red bell pepper, diced
  • 0.5 green bell pepper, diced
  • 1 clove garlic, minced, or to taste
  • 1 pound ground turkey
  • 1 pound lean ground beef
  • 2 cups cooked quinoa, or more to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons sweet chili sauce
  • 0.75 teaspoon ground ginger
  • 0.25 cup bread crumbs, or as needed
  • 0.25 cup ketchup
  • 1 tablespoon Worcestershire sauce
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet with a shiny layer of aluminum foil.
  • In a large skillet, heat olive oil over medium-high heat. Cook onion, red bell pepper, and green bell pepper until soft, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Season with salt and pepper, then let cool off the heat.
  • Combine turkey, beef, quinoa, milk, eggs, 2 tablespoons Worcestershire sauce, sweet chili sauce, and ground ginger in a bowl and mix until fully combined. Mix in sauteed vegetables. Slowly add bread crumbs until the mixture is moist and sticks together. Shape into 6 mini loaves and arrange on a baking sheet.
  • Combine the brown sugar, ketchup, and Worcestershire sauce in a bowl, whisking until the sugar dissolves and the glaze is smooth.
  • 1. Bake the meat loaves in the preheated oven for 30 minutes. 2. Brush each loaf with the glaze and bake until no longer pink in the center, 10 to 15 minutes more, ensuring they reach an internal temperature of 160°F (70°C).
