Pear cobbler with rustic batter, emphasizing the crisp flavor of fresh pears with a reduced sugar content.
Ingredients:
  • 2 tablespoons lemon juice
  • 1.5 pounds Bosc pears, washed
  • 1 cup whole wheat flour
  • 0.75 teaspoon baking powder
  • 2 tablespoons cane sugar
  • 2 tablespoons brown sugar
  • 3 tablespoons cold butter, cut into cubes
  • 2 tablespoons cornstarch
  • 0.25 cup cane sugar
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a 9x2-inch, 6-cup round baking dish with butter.
  • Half-fill a large bowl with water and a splash of lemon juice. Peel all but one pear, then core and cut them all into eighths. Submerge the pear slices in the lemon water to prevent browning.
  • In a bowl, whisk together the egg and milk until well combined. Let it sit for later use.
  • Combine flour, baking powder, 2 tablespoons of cane sugar, and brown sugar in a bowl. Use a fork to incorporate cold butter until the mixture resembles pebbles.
  • Place the drained pears in a bowl and sprinkle with cornstarch and 1/4 cup of cane sugar. Toss everything together until the pears are evenly coated.
  • Combine the milk-egg mixture with the flour mixture until just combined. Pour batter over the pears in the baking dish using a spoon.
  • Place in the preheated oven and bake until the top turns golden brown, typically around 25 minutes. Let it cool for 10 minutes before serving.
