Fold airy egg whites into fluffy pear muffin batter, topped with crunchy cinnamon-sugar dust!
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1 cup diced pears
  • 1 cup buttermilk
  • 2 eggs, separated, yolks lightly beaten
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 tablespoons white sugar
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and cozy up a 12-cup muffin tin with paper liners.
  • Combine flour, 3/4 cup sugar, baking powder, 1 teaspoon cinnamon, baking soda, nutmeg, and salt in a large bowl, then add pears and mix well to coat evenly.
  • Mix together buttermilk, egg yolks, oil, and vanilla extract until well combined. Gently fold the mixture into the pears until just moistened.
  • Using an electric mixer, whip egg whites in a separate bowl until they form stiff peaks. Gently fold the whipped egg whites into the batter until just combined. Fill muffin cups 2/3 full with the batter.
  • Mix 2 tablespoons of sugar with 1 tablespoon of cinnamon in a bowl; then sprinkle over the batter.
  • Bake until the tops are light golden brown and spring back when lightly pressed, 25 to 30 minutes in the preheated oven.
