Persimmon and date cookies: Sweet & juicy combo, yields 72 delicious bites.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup brown sugar
  • 0.5 cup coconut oil
  • 0.5 cup butter
  • 1 cup persimmon puree
  • 2 teaspoons vanilla extract
  • 2 cups unsweetened date pieces
  • 1.75 cups rolled oats
Instructions:
  • Preheat your oven to a toasty 375°F (190°C).
  • Combine the flour, baking soda, and salt in a bowl.
  • In a separate bowl, cream together white sugar, brown sugar, coconut oil, and butter until smooth. Mix in persimmon pulp, then add eggs and vanilla extract, beating until everything is well combined and scraping the sides of the bowl occasionally.
  • Gently fold the flour mixture into the persimmon mixture until fully incorporated. Mix in the dates and oats until the dough is well combined.
  • Spoon rounded teaspoonfuls of dough onto an ungreased baking sheet, spacing them 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes until golden brown. Then, cool briefly before transferring to a wire rack to cool completely for about 10 minutes.
