Personal Bread Puddings with Caramel-Whiskey Sauce

Ingredients:
  • 1 1/2 cups 1/2-inch cubes day-old bread
  • 2 tablespoons dried cranberries, cherries, blueberries or raisins
  • 1/2 cup milk
  • 1 egg
  • 2 tablespoons packed brown sugar
  • 2 tablespoons caramel ice cream topping
  • 2 teaspoons whiskey, brandy or rum
  • 1/8 teaspoon ground cinnamon
  • Additional ground cinnamon, if desired
Instructions:
  • Evenly distribute the bread cubes and cranberries into 2 (10-ounce) microwavable custard cups or 2 (10- to 12-ounce) microwavable mugs.
  • In a small bowl, whisk together milk, egg, and sugar until combined. Pour mixture evenly over the bread and let it sit for 5 minutes to soak.
  • Microwave the uncovered pudding on medium power (50%) for about 4 1/2 minutes or until it sets. Allow it to cool for 5 minutes before serving.
  • In a small microwavable bowl, combine caramel topping, whisky, and cinnamon. Microwave on high for 15 seconds or until warm. Drizzle over bread pudding and sprinkle with more cinnamon if desired.
