Personal Pizza-Stuffed Grilled Meatloaves

Whip up and grill delectable mini meatloaves in 60 minutes for six servings.
Ingredients:
  • 1 1/2 lb extra-lean (at least 90%) ground beef
  • 1 cup fresh bread crumbs
  • 1 tablespoon milk
  • 1 teaspoon pizza seasoning
  • 1/2 teaspoon salt
  • 1 to 2 cloves garlic, minced
  • 1/2 cup pizza sauce
  • 1/3 cup finely chopped onion (1 small)
  • 1/3 cup chopped pitted ripe olives
  • 3 slices (1 oz each) mozzarella cheese, cut into strips
Instructions:
  • Preheat your gas or charcoal grill. In a large bowl, combine ground beef, bread crumbs, milk, pizza seasoning, salt, and garlic. Shape the mixture into 12 sausage-shaped rolls, then flatten each to 1/4-inch thickness to create patties.
  • Combine 1/4 cup of pizza sauce with diced onion and olives in a bowl. Spread about 1 tablespoon of the mixture onto 6 patties, making sure to leave a 1/2-inch border. Top with the remaining patties and seal the edges by pinching them together.
  • Grill the meatloaves with the lid closed over medium heat for 10 to 14 minutes, turning occasionally, until a thermometer inserted into the meatloaves reads 160°F (avoid filling). Brush the meatloaves with the remaining 1/4 cup pizza sauce, then add cheese strips on top of each; cook for an additional minute until the cheese melts.
