Tomato and Basil Flatbread Pizza (Cooking for 2)

Ingredients:
  • 2 tablespoons pesto sauce
  • 2 flatbreads or pitas, each about 7 inches across
  • 1 tomato, thinly sliced
  • 1 tablespoon chopped fresh basil leaves
  • 1/4 cup shredded mozzarella cheese
Instructions:
  • Preheat oven to 425°F.
  • Smother bread with fragrant pesto, then stack with juicy tomato slices and fresh basil leaves. Shower a generous handful of cheese on top. Bake for 7 minutes until the cheese turns a luscious golden hue and melts irresistibly.
