Peruvian chicken soup with hearty chunks of chicken, potatoes, peas, corn, and red pepper - a lighter twist on the classic Peruvian Chicken Chowder.
Ingredients:
  • 4 skinless, boneless chicken breast halves - cut in half
  • 0.5 cup olive oil
  • 1 medium onion, chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon seeded, minced serrano chile
  • 0.5 cup chopped cilantro
  • 1 cup green peas
  • 1 cup corn
  • 0.5 red bell pepper, chopped
  • 10 cups chicken broth
  • 4 Yukon Gold potatoes, cut in half
  • 1 cup uncooked white rice
Instructions:
  • Season the chicken with salt and pepper. In a large, heavy pot over medium-high heat, heat olive oil. Add onion, garlic, and serrano chili; cook until onion softens, about 1 minute. Then, add the seasoned chicken and cook for 5 more minutes.
  • Add the vibrant cilantro, along with the sweet peas, corn, and red pepper, and let it sizzle for a minute. Next, gently introduce the chicken broth, potatoes, and rice into the mixture. Allow the flavors to meld together by bringing it to a boil, then lower the heat to medium-low and let it simmer for around 40 minutes until the chicken is cooked through and the potatoes are soft.
