Transform the iconic Philly cheesesteak into a rich and creamy soup with roast beef, provolone cheese, bell peppers, onions, and mushrooms.
Ingredients:
  • 0.75 cup butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 white onion, diced
  • 1 green bell pepper, diced
  • 0.66666668653488 cup all-purpose flour
  • 6 cups milk
  • 1 (10.5 ounce) can beef consomme
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 (8 ounce) package provolone cheese, diced
  • 0.75 pound sliced roast beef, chopped
Instructions:
  • In a large, heavy-bottomed pot or Dutch oven over medium heat, melt butter. Add mushrooms, onion, and bell pepper; cook and stir until tender, about 5 minutes. Sprinkle flour over the vegetables and continue to cook and stir until the flour is golden, about 5 minutes more.
  • Whisk in milk slowly and bring vegetable mixture to a simmer. Cook until thickened, stirring often for about 5 minutes. Reduce heat to medium-low, add beef consomme, season with salt and pepper. Stir in provolone cheese until melted, about 3 to 5 minutes. Remove from heat and blend in roast beef.
