Tangy salsa, zesty lemon, and bold Dijon mustard create a flavorful marinade and glaze for sauteed chicken.
Ingredients:
  • 0.5 cup picante sauce
  • 0.25 cup Dijon-style prepared mustard
  • 2 tablespoons lemon juice
  • 6 skinless, boneless chicken breast halves
  • 2 tablespoons olive oil
Instructions:
  • Combine picante sauce, mustard, and lemon juice in a large glass bowl. Toss in the chicken to coat. Marinate in the refrigerator for 30 minutes, covered.
  • In a large skillet, heat olive oil. Cook chicken in hot oil until well browned on both sides. Pour in remaining marinade and simmer until chicken is glazed, tender, and juices run clear. Transfer chicken to a platter. Boil the marinade for 5 minutes to ensure safety, then drizzle over the chicken.
