Michigan Tech's famous pickled eggs recipe - a perfect pairing with a cold beer!
Ingredients:
  • 2 pounds ring bologna, peeled and sliced into large chunks
  • 4 cups vinegar
  • 1 (4.5 ounce) can chopped pickled jalapeno peppers
  • 1 onion, chopped
  • 1 cup water
  • 1 tablespoon hot pepper sauce
  • 1 tablespoon salt
Instructions:
  • Place the bologna in a large sealable jar. In a saucepan, combine vinegar, peppers, onion, water, hot pepper sauce, and salt. Bring the mixture to a boil, then pour it over the bologna in the jar. Seal the jar and shake daily. Allow the pickling process to continue for at least 3 days, but for optimal flavor, let the bologna pickle for 90 days. Enjoy the flavorful results!
