German Bologna Salad: Bologna, pickles, tomatoes, chives in zesty vinaigrette. Effortless and delicious.
Ingredients:
  • 1 (3 pound) German bologna block
  • 0.5 cup distilled white vinegar
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 1 tomato, thinly sliced
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon minced fresh chives
  • 0.5 teaspoon minced fresh parsley
  • 4 Polskie Ogorki (Polish Dill Pickles)
Instructions:
  • Cut the bologna into 1/4-inch thick slices, then slice into 1/4-inch strips along the entire length to resemble large spaghetti. Transfer to a serving bowl.
  • In a medium bowl, combine vinegar and oil, then add onion, tomato, garlic, chives, and parsley. Slice pickles into spears, mix into the dressing. Pour the mixture over bologna, ensuring it's well coated. Refrigerate for 2 hours, then serve cold.
