Swedes masterfully preserve herring post-spawning for a rich and flavorful experience. Creative pickle options including dill, red onion, cloves, and even a curried mayo elevate the humble fish.
Ingredients:
  • 4 large (about 80g each) or 8 small pickled herrings from sustainable sources
  • 1 x 150 ml tub of soured cream
  • 1 bunch of fresh chives (30g)
  • 1 small red onion peeled and very finely chopped
  • fish roe optional
  • 1 lemon
  • dill flowers optional
Instructions:
  • Place 1 or 2 herrings in the center of each plate, drizzle soured cream on top, sprinkle generously with chopped chives, onion, and fish roe (if desired). Grate lemon zest over each serving, and decorate with dill flowers. Serve with buttered rye bread and lemon wedges.
