Make delicious, creamy chicken, mushroom, and bacon pies in no time using a pie maker. Ideal for a quick and effortless dinner.
Ingredients:
  • 600g chicken thigh fillets, fat trimmed, cut into 3cm pieces
  • 150g smoked rindless bacon rashers, coarsely chopped
  • 150g button mushrooms, thickly sliced
  • 40g (1/4 cup) plain flour
  • 250ml (1 cup) Chicken Style Liquid Stock
  • 185ml (3/4 cup) thickened cream
  • 2 tsp chopped fresh thyme leaves
  • 2 green shallots, trimmed, thinly sliced
  • 4 sheets (25 x 25cm) frozen shortcrust pastry, just thawed
  • 1 egg, whisked
  • Sesame seeds, to sprinkle
Instructions:
  • In a large frying pan over high heat, heat oil until shimmering. Add half of the chicken and cook for 5 minutes, turning halfway until golden. Transfer to a plate using tongs. Repeat with the remaining chicken.
  • Lower the heat to medium and introduce the irresistible bacon into the pan. Sauté with frequent stirring for 5 minutes or until it achieves a lovely light golden hue. Now, add the mushrooms and continue to stir for 2 minutes until they soften. Sprinkle in the flour and stir for another minute to bring out the flavors.
  • Gradually pour in the stock while stirring constantly. Cook for 1 minute until the mixture is silky. Stir in the cream, chicken, and thyme. Simmer on low heat, stirring occasionally, for 10 minutes until thickened. Season and fold in the shallot. Allow it to cool for 30 minutes.
  • Cut 8 large and 8 small pastry rounds from the pastry sheets using the pie-maker cutter.
  • Carefully fit 4 large sheets of pastry into the pie maker. Fill with chicken mixture, then cover with 4 smaller sheets of pastry. Brush with egg wash. Start the pie maker and cook for 8 minutes. Add sesame seeds and continue cooking for another 2 minutes until pies are golden brown.
  • Continue layering the rest of the pastry with the chicken mixture, egg wash, and sesame seeds.
